A rich and comforting dish featuring succulent shrimp in a luscious cream sauce with cherry tomatoes and spinach.

Ingredients

  • 1 pound shrimp, peeled and deveined
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 cup cherry tomatoes, halved
  • 1 cup spinach
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh basil for garnish

Instructions

  1. Heat the olive oil in a large skillet over medium heat until shimmering.
  2. Add minced garlic and sauté until fragrant, about 1 minute.
  3. Cook the shrimp in the skillet until pink, about 3-4 minutes, stirring occasionally.
  4. Toss in the halved cherry tomatoes and spinach; stir until the spinach wilts.
  5. Pour in the heavy cream, stirring well to combine.
  6. Stir in the grated Parmesan cheese, then season with salt and pepper.
  7. Continue to cook for an additional 2-3 minutes until the sauce thickens.
  8. Garnish with fresh basil and serve immediately.

Notes

This dish pairs wonderfully with a warm loaf of bread and an arugula salad. For leftovers, refrigerate in an airtight container for up to 2 days.
