A comforting yet elegant creamy vodka pasta that envelops you in warmth.

Ingredients

  • 1 lb pasta
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 cup tomato sauce
  • 1 cup heavy cream
  • 1/2 cup vodka
  • Salt and pepper to taste
  • Fresh basil for garnish
  • Parmesan cheese for serving

Instructions

  1. Boil the pasta according to package instructions. Drain and set aside, making sure to reserve some pasta water in case you need to thin the sauce later!
  2. Heat the olive oil in a large skillet over medium heat. Add the minced garlic and sauté until fragrant, about 1-2 minutes.
  3. Simmer the sauce by adding the tomato sauce and vodka to the skillet. Let it simmer for about 5 minutes.
  4. Mix in the heavy cream and stir well until everything is beautifully blended.
  5. Season the sauce with salt and pepper to taste, adjusting to find the perfect balance of flavors.
  6. Combine the cooked pasta with the sauce and toss to ensure every strand is coated. Add reserved pasta water if needed.
  7. Serve hot, garnished with fresh basil and grated Parmesan cheese.

Notes

Pairs well with a simple arugula salad and a light-bodied Chardonnay.
