Crème Brûlée Cheesecake

A rich and creamy cheesecake that combines the flavors of traditional cheesecake with a crispy caramelized top.

Ingredients

  • 2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 1 cup sugar
  • 4 (8 ounce) packages cream cheese, softened
  • 1 teaspoon vanilla extract
  • 4 large eggs
  • 1 cup heavy cream
  • 1/4 cup sugar (for topping)
  • 2 tablespoons water

Instructions

  1. Preheat the oven to 325°F (165°C).
  2. Combine graham cracker crumbs and melted butter in a mixing bowl, then press into the bottom of a springform pan.
  3. Beat the softened cream cheese and sugar until smooth and creamy.
  4. Add in the eggs one at a time, mixing well after each addition.
  5. Mix in the vanilla extract and heavy cream until fully combined.
  6. Pour the cheesecake mixture over the crust in the springform pan.
  7. Bake for 1 hour, or until the center is set and only slightly jiggly.
  8. Cool to room temperature, then refrigerate for at least 4 hours or overnight.
  9. Sprinkle sugar evenly over the top of the cheesecake and caramelize with a kitchen torch.
  10. Allow to sit for a few minutes before slicing.

Notes

Serve with fresh berries or a drizzle of chocolate sauce. Store leftovers in the refrigerator for up to 5 days.
