  • 2 chicken breasts
  • 2 tablespoons Cajun seasoning
  • 1 cup cooked rice
  • 1 tablespoon olive oil
  • 1 cup bell peppers, sliced
  • 1 cup corn, canned or frozen
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Season the chicken by liberally seasoning with Cajun seasoning, salt, and pepper.
  2. Heat the olive oil in a skillet over medium heat until shimmering.
  3. Cook the chicken in the skillet for 6-7 minutes on each side until golden brown and crispy.
  4. Slice the cooked chicken into strips and set aside.
  5. Sauté the sliced bell peppers and corn in the same skillet for about 5 minutes.
