  • 1 cup refried beans
  • 1/2 cup diced onion
  • 1/2 teaspoon cumin
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • Large tortillas (for wrapping)
  • Oil (for frying)
  • Sour cream (for serving)
  • Salsa (for serving)

Instructions

  1. Prepare the Filling: In a bowl, combine the cooked shredded chicken, cheese, refried beans, diced onion, cumin, garlic powder, salt, and pepper. Mix well.
  2. Assemble the Chimichangas: Take a large tortilla and place a portion of the chicken mixture in the center. Fold the sides over and roll tightly.
  3. Heat the Oil: In a frying pan, heat oil over medium heat.
  4. Fry to Perfection: Fry the chimichangas until golden brown, about 3-5 minutes on each side.
  5. Drain Excess Oil: Remove chimichangas from oil and place on paper towels to drain.
