A low-carb twist on the classic Reuben sandwich, featuring crispy Swiss cheese, corned beef, and zesty sauerkraut.

  • 1/2 pound sliced corned beef deli meat
  • 1 cup sauerkraut
  • 1/4 cup mayonnaise
  • 1 tsp Worcestershire sauce
  • 1 1/2 tbsp sugar-free ketchup
  • 2 tsp Swerve confectioner’s sugar substitute
  • 1 tbsp horseradish sauce
  • 1 pinch paprika

Instructions

  1. Prepare the Cheese Base: In a microwave-safe bowl, add the shredded Swiss cheese and microwave for about 1 minute, or until melted. Stir until smooth, ensuring there are no lumps.
  2. Create the Flavorful Filling: In a separate bowl, combine the mayonnaise, Worcestershire sauce, sugar-free ketchup, Swerve, horseradish sauce, and paprika. Mix thoroughly to create a zesty sauce that will tie the flavors together.
  3. Assemble the Roll-Ups: On a sheet of parchment paper, spread the melted cheese into a thin rectangle. Layer the sliced corned beef evenly over the cheese, followed by a generous sprinkle of sauerkraut. Drizzle the sauce over the sauerkraut.
  4. Roll and Prepare for Baking: Using the parchment paper for support, carefully roll the cheese and filling into a tight log. Make sure to roll it as you would a jellyroll cake to maintain the shape.
  5. Bake to Perfection: Preheat your oven to 375°F (190°C). Place the roll onto a baking sheet lined with parchment paper. Bake for approximately 10 minutes, or until the cheese is bubbly and the roll is golden brown.
  6. Slice and Serve: Once baked, remove from the oven and let it cool for a few moments before slicing into bite-sized pieces. Serve warm and enjoy every crispy, cheesy mouthful!
