A comforting plate of crispy chicken smothered in a rich, garlicky sauce, perfect for weeknight dinners.

Ingredients

  • 4 small to medium chicken breasts (or 2 large halved)
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 34 cloves garlic, minced
  • 1 cup light cream or heavy cream
  • 1 tablespoon Italian seasoning or oregano
  • 1/2 cup parmesan cheese, grated
  • 1 cup spinach, chopped (optional)

Instructions

  1. Season the chicken with salt and pepper on both sides.
  2. Sear the chicken in olive oil over medium-high heat for 5-6 minutes on each side until golden brown.
  3. Sauté the minced garlic in the skillet until fragrant, about 30 seconds.
  4. Pour in the cream, stirring constantly, then add Italian seasoning and Parmesan cheese until smooth.
  5. Add the spinach (if using) and let it simmer until wilted.
  6. Combine the chicken with the sauce, allowing it to simmer for 1 minute.
  7. Serve hot with your favorite sides.

Notes

Great when paired with pasta, roasted vegetables, or mashed potatoes. Leftovers can be stored in the refrigerator for up to 3 days.
