Delicious crispy roasted mini potatoes seasoned with garlic and smoked paprika, perfect as a side dish.

Ingredients

  • 1 1/2 pounds mini potatoes
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • 3/4 teaspoon kosher salt
  • 1 tablespoon chopped chives

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Wash and dry the mini potatoes thoroughly, then halve them.
  3. Toss the potato halves with olive oil, garlic powder, smoked paprika, and salt until well coated.
  4. Line a baking sheet with parchment paper.
  5. Arrange the potatoes cut side down in a single layer on the prepared baking sheet.
  6. Roast in the oven for 30 to 35 minutes.
  7. Toss the potatoes with chopped chives before serving.

Notes

For more flavor, add a splash of lemon juice before serving. Store leftovers in an airtight container for up to three days.
