Delicious crispy smashed potatoes that are fluffy on the inside and crunchy on the outside, perfect as a side dish or appetizer.

Ingredients

  • 2 lbs new potatoes
  • 3 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1 tbsp herbs (such as rosemary or thyme)
  • 1 tsp spices (such as paprika or garlic powder)

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Boil the new potatoes in salted water until fork-tender, about 15 minutes.
  3. Drain the potatoes using a colander, and let cool slightly.
  4. Smash the potatoes on a baking sheet with the bottom of a glass or potato masher.
  5. Drizzle with olive oil and season with salt, pepper, herbs, and spices.
  6. Bake in the oven for 20-25 minutes until golden brown and crispy.
  7. Serve hot as a side dish or appetizer.

Notes

Use small new potatoes for better smashing. Don’t overcrowd the baking sheet for optimal crispiness.
