A hearty and wholesome dish featuring tender chicken, fluffy potatoes, and sweet carrots, cooked effortlessly in a crock pot for a comforting meal.

  • 4 chicken breasts
  • 1/2 cup unsalted butter
  • 4 cloves garlic, minced
  • 4 medium potatoes, diced
  • 3 carrots, sliced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • Fresh parsley for garnish

Instructions

  1. Layer the chicken breasts in the bottom of the crock pot.
  2. Prepare the garlic butter by melting the butter and stirring in minced garlic. Pour it over the chicken breasts.
  3. Add the diced potatoes and sliced carrots on top of the chicken.
  4. Season with salt, black pepper, dried thyme, and paprika.
  5. Set the crock pot to cook on low for 6-8 hours or high for 3-4 hours.
  6. Shred the chicken with two forks and mix everything together in the crock pot.
  7. Garnish with fresh parsley before serving.

Notes

For a thicker sauce, mix cornstarch with water and stir into the slow cooker in the last 30 minutes of cooking.
