A rich and creamy soup combining the flavors of chicken Parmesan and a hearty broth, perfect for busy weeknights.

Ingredients

  • 2 chicken breasts
  • 1 can of diced tomatoes
  • 1 can of chicken broth
  • 1 cup of heavy cream
  • 1 cup of grated Parmesan cheese
  • 1 teaspoon of Italian seasoning
  • Salt and pepper to taste
  • Cooked penne pasta (for serving)
  • Fresh basil (for garnish)

Instructions

  1. Place the chicken breasts in the slow cooker.
  2. Add the diced tomatoes, chicken broth, heavy cream, Parmesan cheese, Italian seasoning, salt, and pepper.
  3. Stir gently to ensure everything is well mixed.
  4. Cover the slow cooker and cook on low for 6-8 hours or on high for 4 hours.
  5. Shred the cooked chicken breasts and return shredded chicken to the pot.
  6. Serve the soup over cooked penne pasta and garnish with fresh basil.

Notes

For a lighter version, consider using low-fat cream. You can add chopped spinach or kale for extra nutrition during cooking.
