Cucumber and Sweet Pepper Salad

A refreshing salad with crisp vegetables and bright flavors, perfect for summer gatherings.

Ingredients

  • 1 large cucumber
  • 1 red bell pepper
  • 1 yellow bell pepper
  • 1/4 red onion
  • 1/4 cup olive oil
  • 2 tablespoons white wine vinegar
  • 1 tablespoon honey
  • Salt and pepper to taste

Instructions

  1. Wash the vegetables.
  2. Peel the cucumber if desired, then cut it in half lengthwise and scoop out the seeds.
  3. Slice the cucumber into thin rounds and place them in a large mixing bowl.
  4. Remove the stems and seeds from the red and yellow bell peppers, then slice them into strips and add them to the bowl with the cucumber.
  5. Finely dice the red onion and add it to the bowl with the other vegetables.
  6. Whisk together the olive oil, white wine vinegar, honey, salt, and pepper until well combined.
  7. Pour the dressing over the vegetables in the mixing bowl.
  8. Toss the salad until all the vegetables are evenly coated with the dressing.
  9. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes.
  10. Give the salad a final toss before serving.
  11. Transfer the salad to a serving dish and enjoy!

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days.
