Soft, buttery brioches filled with luscious vanilla custard and chocolate chips, perfect for breakfast or as a sweet treat.

  • 3 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 1 packet instant yeast (2 1/4 teaspoons)
  • 1/2 teaspoon salt
  • 1/2 cup milk, warm
  • 4 large eggs, room temperature
  • 1/2 cup unsalted butter, melted
  • 1 teaspoon vanilla extract
  • 1 cup chocolate chips
  • 1 cup vanilla custard

Instructions

  1. Combine Dry Ingredients: In a mixing bowl, combine the flour, sugar, instant yeast, and salt. Stir to combine.
  2. Whisk Wet Ingredients: In another bowl, whisk together the warm milk, eggs, melted butter, and vanilla extract until fully blended.
  3. Pour the wet ingredients into the dry ingredients and mix until a dough forms.
  4. Knead the dough on a floured surface for about 5-7 minutes until smooth and elastic.
  5. Place the dough in a greased bowl, cover it, and let it rise in a warm place until doubled in size (about 1 hour).
  6. Preheat your oven to 375°F (190°C) while the dough is rising.
  7. Once the dough has risen, punch it down gently and incorporate the chocolate chips until evenly distributed.
  8. Divide the dough into equal portions and shape them into round brioches.
  9. Place each brioche in a greased muffin tin, allowing enough space for them to rise.
  10. Make a small indentation in the center of each brioche and fill with vanilla custard.
  11. Cover the muffin tin and let the brioches rise again for about 30 minutes.
  12. Bake in the preheated oven for 15-20 minutes or until golden brown and smelling divine.
  13. Allow to cool slightly before serving, letting the flavors settle throughout.

Notes

Enjoy warm or at room temperature. Store in an airtight container for up to 2 days or freeze for up to 3 months.
