A rich and velvety chocolate layer cake perfect for any occasion, topped with a glossy ganache and fluffy vanilla cream.

Ingredients

  • 2 cups all-purpose flour
  • 2 cups granulated sugar
  • 3/4 cup unsweetened cocoa powder
  • 1 1/2 teaspoons baking powder
  • 1 1/2 teaspoons baking soda
  • 1 teaspoon salt
  • 2 large eggs
  • 1 cup whole milk
  • 1/2 cup vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup boiling water
  • 1 cup heavy cream
  • 2 tablespoons powdered sugar
  • 1 teaspoon vanilla extract
  • 8 ounces semisweet chocolate, chopped

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. Combine flour, sugar, cocoa powder, baking powder, baking soda, and salt in a large bowl.
  3. Add the eggs, milk, oil, and 2 teaspoons of vanilla. Beat on medium speed for 2 minutes.
  4. Stir in the boiling water until well combined.
  5. Pour the batter into the prepared cake pans, leveling them off.
  6. Bake for 30-35 minutes or until a toothpick comes out clean.
  7. Let the cakes cool in the pans for 10 minutes before transferring to wire racks.
  8. Beat the heavy cream, powdered sugar, and 1 teaspoon of vanilla until soft peaks form for the vanilla cream.
  9. Layer one cake on a plate, spread vanilla cream on top, then place the second layer on top.
  10. Heat the heavy cream until simmering for the ganache, then pour it over the chopped chocolate. Stir until smooth.
  11. Pour the ganache over the cake, allowing it to drip down the sides.
  12. Let the ganache set before slicing and serving.

Notes

Store leftover cake in the refrigerator for up to a week or freeze slices for a month.
