Ingredients

  • 200g dark chocolate
  • 250g mascarpone cheese
  • 2 cups heavy cream
  • 1/2 cup sugar
  • 4 large eggs
  • 1 cup flour
  • 1/2 cup cocoa powder
  • 1 teaspoon baking powder
  • 1/2 cup milk
  • 1 cup water
  • 1 teaspoon vanilla extract
  • Glaze:
  • 200g dark chocolate
  • 1/2 cup heavy cream

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour a dome-shaped cake mold.
  2. Melt the dark chocolate in a heat-proof bowl over simmering water or in the microwave.
  3. Whisk the eggs and sugar together until light and fluffy.
  4. Combine the melted chocolate with the egg mixture.
  5. Sift the flour, cocoa powder, and baking powder. Fold into the chocolate mixture.
  6. Bake the cake for 25-30 minutes or until a toothpick comes out clean.
  7. Prepare the mascarpone mousse by whipping the heavy cream and folding in the mascarpone and vanilla.
  8. Slice the cooled sponge cake in half horizontally.
  9. Layer the mousse between the two sponge halves.
  10. Make the mirror glaze by heating cream and mixing it with chocolate.
  11. Pour the glaze over the assembled cake.
  12. Chill the dessert in the fridge for at least 4 hours before serving.

Notes

This dessert pairs well with whipped cream or fresh berries. Store leftovers in an airtight container for up to 3 days.
