A warm and fluffy Italian herb and cheese bread, perfect as a side dish or snack.

Ingredients

  • 3 cups all-purpose flour
  • 1 packet (2 1/4 teaspoons) active dry yeast
  • 1 cup warm water (110°F)
  • 1 tablespoon sugar
  • 1 teaspoon salt
  • 2 tablespoons olive oil
  • 1 tablespoon dried Italian herbs (oregano, basil, thyme)
  • 1 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese

Instructions

  1. Activate the yeast: In a small bowl, dissolve sugar in warm water and add yeast. Allow to sit until foamy, about 5 minutes.
  2. Combine dry ingredients: In a large bowl, combine flour, salt, and dried herbs.
  3. Mix wet and dry ingredients: Add the yeast mixture and olive oil to the flour mixture. Stir until a dough forms.
  4. Knead your dough: Knead the dough on a floured surface for about 5-7 minutes until smooth.
  5. First rise: Place the dough in a greased bowl, cover, and let rise in a warm place until doubled, about 1 hour.
  6. Preheat your oven: Preheat the oven to 375°F (190°C).
  7. Incorporate the cheeses: Punch down the risen dough and mix in the cheeses.
  8. Shape the loaf: Shape the dough into a loaf and place it in a greased loaf pan.
  9. Second rise: Cover and let it rise for another 30 minutes.
  10. Bake the bread: Bake for 25-30 minutes until golden brown.
  11. Cool and slice: Let cool slightly before slicing and serving.

Store in an airtight container for up to 3 days or freeze slices for up to a month.
