A delightful dish that combines crispy chicken with the tangy flavors of dill pickle juice and nutty Parmesan cheese.

  • 4 chicken breasts
  • 1 cup dill pickle juice
  • 1 cup grated Parmesan cheese
  • 1 cup breadcrumbs
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • Olive oil

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Marinate the chicken breasts in dill pickle juice for at least an hour or overnight.
  3. Mix together Parmesan cheese, breadcrumbs, garlic powder, onion powder, salt, and pepper in a bowl.
  4. Remove the chicken from the pickle juice and pat dry with paper towels.
  5. Dip each chicken breast into the breadcrumb mixture, pressing to adhere.
  6. Place the coated chicken breasts on a greased baking sheet.
  7. Drizzle olive oil over the chicken.
  8. Bake for 25-30 minutes, until cooked through and golden.
  9. Serve with extra dill pickle sauce if desired.

Notes

Leftover chicken can be kept in an airtight container in the fridge for up to 3 days or frozen for up to 3 months.
