A cozy and comforting one-dish meal featuring creamy rice, tender chicken, and colorful vegetables, perfect for busy weeknights.

Ingredients

  • 2 cups cooked rice
  • 2 cups cooked chicken, shredded
  • 1 can cream of chicken soup
  • 1 cup chicken broth
  • 1 cup frozen mixed vegetables
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Salt and pepper to taste
  • 1 cup shredded cheese (optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Combine the cooked rice, shredded chicken, cream of chicken soup, chicken broth, and frozen mixed vegetables in a large baking dish.
  3. Sprinkle in the garlic powder, onion powder, salt, and pepper. Mix everything well.
  4. Cover the dish with aluminum foil and bake for 30 minutes.
  5. After 30 minutes, carefully remove the foil and sprinkle cheese on top if using. Bake for an additional 10-15 minutes until cheese is melted and bubbly.
  6. Let the dish cool for a few minutes before serving.

Notes

Leftover creamy rice and chicken can be stored in an airtight container in the refrigerator for up to 3 days and can be frozen for up to 2 months.
