A light and tropical cake that combines a boxed cake mix with crushed pineapple and whipped topping, perfect for celebratory gatherings.

  • 1 box yellow cake mix
  • 3 large eggs
  • 1/2 cup vegetable oil
  • 1 cup water
  • 1 can crushed pineapple, drained (20 oz)
  • 1 cup shredded coconut (for garnish)
  • 1 cup whipped cream
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C) and grease two 9-inch round cake pans.
  2. Combine the yellow cake mix, eggs, vegetable oil, and water in a large mixing bowl. Whisk until smooth.
  3. Fold in the drained crushed pineapple gently into the batter.
  4. Pour the batter evenly into the prepared cake pans and bake for 25-30 minutes.
  5. Allow the cakes to cool in the pans for about 10 minutes, then transfer to wire racks to cool completely.
  6. Mix together the whipped cream, powdered sugar, and vanilla extract in a separate bowl until soft peaks form.
  7. Place one cooled cake layer on a serving platter and spread a layer of whipped topping over it, then add the second layer.
  8. Top the cake with the remaining whipped topping and sprinkle shredded coconut on top.

Notes

Make sure to drain the pineapple well to avoid a soggy cake. Consider toasting the coconut for extra flavor.
