  • 2 large bell peppers
  • 1 cup ground beef
  • 1 cup cooked rice
  • 1 cup shredded cheese
  • 1/2 cup diced onion
  • 1 can diced tomatoes
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • 1 tablespoon olive oil

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds.
  3. In a skillet, heat olive oil over medium heat, and sauté the onions and garlic until soft.
  4. Add ground beef to the skillet and cook until browned.
  5. Stir in cooked rice, diced tomatoes, salt, and pepper.
  6. Stuff the mixture into the bell peppers and top with shredded cheese.
  7. Place the stuffed peppers in a baking dish and cover with foil.
  8. Bake for 25-30 minutes, then remove the foil and bake uncovered for an additional 10 minutes.
  9. Serve hot!
