Deliciously fudgy brownies made with black beans, a healthy twist on a classic dessert.

Ingredients

  • 1 can black beans, rinsed and drained
  • 1/2 cup cocoa powder
  • 1/2 cup honey or maple syrup
  • 2 large eggs
  • 1/4 cup coconut oil, melted
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup chocolate chips (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease an 8×8 inch baking dish.
  2. Blend together the black beans, cocoa powder, honey or maple syrup, eggs, melted coconut oil, vanilla extract, baking powder, and salt until smooth.
  3. Stir in the chocolate chips if desired.
  4. Pour the batter into the prepared baking dish and spread it evenly.
  5. Bake for 20-25 minutes or until a toothpick comes out clean.
  6. Allow to cool before slicing.

Notes

These brownies are best served with a scoop of vanilla ice cream or a dollop of whipped cream. Store in an airtight container for optimal freshness.
