Easy Blueberry Pancakes

Fluffy pancakes bursting with fresh blueberries, perfect for breakfast or brunch.

Ingredients

  • 1 cup all-purpose flour
  • 2 tablespoons sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 cup milk
  • 1 large egg
  • 2 tablespoons melted butter
  • 1 cup fresh blueberries

Instructions

  1. Whisk the dry ingredients in a bowl until well combined.
  2. Whip the wet ingredients together in another bowl.
  3. Combine the wet and dry ingredients until just mixed, then fold in the blueberries.
  4. Heat a non-stick skillet over medium heat.
  5. Pour about 1/4 cup of batter for each pancake onto the skillet.
  6. Flip the pancakes once bubbles form on the surface and cook until golden brown.
  7. Serve warm with toppings of your choice.

Notes

Don’t over-mix the batter for fluffy pancakes. Store leftovers in an airtight container in the fridge for up to 3 days.
