Creamy, dreamy cheesecake bars nestled in a buttery graham cracker crust, perfect for sharing.

  • 1 1/2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 2 cups cream cheese, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 1/4 cup sour cream

Instructions

  1. Preheat the oven to 325°F (160°C) and grease a 9×9 inch baking dish.
  2. In a mixing bowl, combine the graham cracker crumbs and melted butter, pressing into the bottom of the prepared dish.
  3. Beat together softened cream cheese and granulated sugar until smooth; add eggs one at a time, mixing well after each addition, then stir in vanilla extract and sour cream.
  4. Pour the cream cheese mixture over the crust and spread evenly.
  5. Bake for 30-35 minutes until slightly jiggly in the center and golden on top.
  6. Cool completely at room temperature and refrigerate for at least 2 hours before cutting into bars.
