  • 2 chicken breasts
  • 1/4 cup chipotle ranch dressing
  • 1 cup cooked rice
  • 1 cup black beans, drained and rinsed
  • 1 cup corn kernels
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 4 large flour tortillas
  • 1 avocado, sliced
  • Sour cream (optional)
  • Fresh cilantro (for garnish)

Instructions

  1. Marinate the chicken breasts in the chipotle ranch dressing for at least 30 minutes.
  2. Preheat your grill to medium-high heat.
  3. Grill the marinated chicken breasts for about 6-7 minutes on each side until fully cooked.
  4. Slice the chicken after resting for a few minutes.
  5. Warm the tortillas on the grill for a few seconds on each side.
