Ingredients

  • 2 eggs
  • 1/4 cup milk
  • 1 teaspoon vanilla extract
  • 2 tablespoons sugar
  • 1 teaspoon cinnamon
  • Butter for frying
  • Maple syrup for serving (optional)

Instructions

  1. Flatten the bread by gently rolling each slice with a pin.
  2. Whisk together the eggs, milk, and vanilla extract.
  3. Prepare the cinnamon sugar by mixing sugar and cinnamon in a dish.
  4. Dip the flattened bread into the egg mixture and spread a layer of cinnamon sugar on one side.
  5. Roll up the bread tightly like a burrito.
  6. Heat a skillet over medium heat and melt some butter.
  7. Fry the roll-ups until golden brown on all sides, about 2-3 minutes per side.
  8. Serve warm, drizzled with syrup if desired.

Notes

For best results, avoid over-soaking the bread. Day-old bread works great and holds up well when rolling.
