A delightful dessert that combines light, fluffy sponge cake infused with robust coffee flavor and creamy whipped filling.

Ingredients

  • 4 eggs
  • 100g sugar
  • 100g all-purpose flour
  • 2 tbsp coffee (strong brewed)
  • 50g unsalted butter (melted)
  • 1 cup cream (whipped)
  • 2 tbsp powdered sugar (for whipped cream)
  • Cocoa powder (for dusting)

Instructions

  1. Preheat your oven to 180°C (350°F). Grease and line a baking tray with parchment paper.
  2. In a bowl, whisk together the eggs and sugar until pale and fluffy.
  3. Gently fold in the flour and melted butter.
  4. Add the strong brewed coffee and stir gently until combined.
  5. Pour the batter into the prepared baking tray and spread evenly.
  6. Bake for 10-12 minutes or until a toothpick comes out clean.
  7. Allow the sponge to cool slightly, then invert it onto a clean tea towel dusted with powdered sugar.
  8. Roll up the sponge with the towel and let it cool completely.
  9. Whip the cream with powdered sugar until soft peaks form.
  10. Unroll the sponge, spread the whipped cream evenly, then roll it back up.
  11. Dust with cocoa powder before serving.

Notes

Be gentle when folding in flour for a light sponge. Use strong coffee for best flavor.
