A nostalgic and comforting pot roast made effortlessly in a slow cooker, perfect for family gatherings.

  • 2 lbs beef roast
  • 4 carrots, chopped
  • 4 potatoes, cubed
  • 1 onion, chopped
  • 4 cups beef broth
  • 2 tablespoons Worcestershire sauce
  • Salt and pepper to taste
  • Optional: herbs like rosemary or thyme

Instructions

  1. Sear the beef roast (optional): Heat oil in a skillet over medium-high heat, season beef with salt and pepper, and sear on all sides until browned. Transfer to slow cooker.
  2. Add the chopped carrots, cubed potatoes, and chopped onion around the roast in the slow cooker.
  3. Pour the beef broth and Worcestershire sauce evenly over the roast and vegetables.
  4. Season generously with salt, pepper, and optional herbs.
  5. Set the crock pot to cook on low for 6-8 hours or high for 3-4 hours.
  6. Serve once the beef is fork-tender, ladling mixed beef and veggies onto plates.

Notes

For thicker gravy, mix cornstarch with water and stir into the cooking liquid during the last 30 minutes. Ensure even vegetable sizes for uniform cooking.
