A creamy and crunchy macaroni salad, perfect for summer picnics and gatherings with friends and family.

Ingredients

  • 2 cups elbow macaroni
  • 1 cup celery, diced
  • 1 cup red pepper, diced
  • 1/2 cup red onion, diced
  • 1 cup mayonnaise
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon sugar
  • Salt and pepper to taste

Instructions

  1. Cook the elbow macaroni according to package instructions, then drain and rinse under cold water to stop the cooking process and cool it down.
  2. Combine the cooked macaroni, crunchy celery, colorful red pepper, and aromatic red onion in a large bowl.
  3. Prepare the dressing by whisking together the mayonnaise, apple cider vinegar, sugar, salt, and pepper until smooth.
  4. Mix the dressing into the macaroni mixture until everything is well-coated.
  5. Chill the salad in the refrigerator for at least 30 minutes before serving.

Notes

Store leftovers in an airtight container for up to three days. Add more mayonnaise or vinegar to refresh the salad if it dries out.
