A delightful fusion of melted cheese and vibrant Mediterranean flavors, perfect for a quick meal or snack.

Ingredients

  • 4 flour tortillas
  • 1 cup feta cheese, crumbled
  • 1 cup mozzarella cheese, shredded
  • 1 cup spinach, chopped
  • 1/2 cup olives, sliced
  • 1/2 cup sun-dried tomatoes, chopped
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Heat the olive oil in a skillet over medium heat.
  2. Place a flour tortilla in the hot skillet.
  3. Sprinkle half of the crumbled feta and shredded mozzarella onto the tortilla.
  4. Layer the chopped spinach, sliced olives, and chopped sun-dried tomatoes on top of the cheese.
  5. Add the remaining cheese and top with another tortilla.
  6. Cook until the bottom tortilla is golden brown, about 3-4 minutes.
  7. Flip the quesadilla and cook until the other side is golden brown and the cheese melts.
  8. Remove from the skillet, cut into wedges, and serve warm.

Notes

Serve with salsa, Greek yogurt, or a crisp side salad for added flavor.
