Delicious and nutritious muffins made with rolled oats and grated carrots, perfect for healthy mornings.

Ingredients

  • 1 cup rolled oats
  • 1 cup grated carrots
  • 1/2 cup applesauce
  • 1/3 cup honey or maple syrup
  • 1/4 cup milk or non-dairy milk
  • 1/4 cup vegetable oil or melted coconut oil
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 cup chopped nuts or raisins (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with liners.
  2. Combine all the ingredients in a large bowl and mix until just combined.
  3. Divide the batter evenly among the muffin cups, filling each about 2/3 full.
  4. Bake for about 20-25 minutes until a toothpick inserted comes out clean.
  5. Cool for a few minutes before removing from the tin and enjoy warm.

Notes

You can substitute applesauce with mashed bananas. For gluten-free muffins, use certified gluten-free oats.
