A warm, hearty meal that combines Italian sausage and orzo pasta in one pot for a deliciously simple dinner.

  • 1 lb Italian sausage
  • 1 cup Orzo pasta
  • 2 tbsp Olive oil
  • 1 Onion, chopped
  • 2 cloves Garlic, minced
  • 1 Bell pepper, diced
  • 1 Zucchini, diced
  • 4 cups Chicken broth
  • 1 tsp Italian seasoning
  • Salt, to taste
  • Pepper, to taste
  • 1/2 cup Parmesan cheese, grated

Instructions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the sliced Italian sausage and cook until browned.
  3. Stir in the onion, garlic, bell peppers, and zucchini; cook until tender.
  4. Add the orzo, chicken broth, Italian seasoning, salt, and pepper. Stir well.
  5. Bring to a boil, then reduce heat and simmer until orzo is cooked, about 10-12 minutes.
  6. Stir in the grated parmesan cheese just before serving.

Notes

To enhance flavors, add red pepper flakes or lemon juice. Use any vegetables on hand for versatility.
