A comforting and delicious casserole made with rotisserie chicken, rice, and creamy ingredients, perfect for busy weeknights.

  • 1 rotisserie chicken, shredded
  • 2 cups cooked rice
  • 1 cup cream of chicken soup
  • 1 cup shredded cheddar cheese
  • 1/2 cup milk
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 1 cup frozen mixed vegetables (optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Combine the shredded rotisserie chicken, cooked rice, cream of chicken soup, milk, garlic powder, onion powder, salt, pepper, and mixed vegetables in a large mixing bowl.
  3. Stir in 1/2 cup of shredded cheddar cheese.
  4. Transfer the mixture to a greased baking dish and spread it evenly.
  5. Sprinkle the remaining cheese over the top.
  6. Bake for 25-30 minutes, until bubbly and golden brown.
  7. Cool slightly before serving.
