Delightful muffins combining sausage and pancakes, perfect for busy mornings or a satisfying snack.

Ingredients

  • 1 cup milk
  • 2 large eggs
  • 1 cup cooked sausage, crumbled
  • 1/2 cup cheese (optional)
  • 1/4 cup maple syrup (optional)
  • 1 teaspoon baking powder
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Whisk together the pancake mix, milk, eggs, baking powder, salt, and pepper until well combined.
  3. Stir in the crumbled sausage and cheese, if using.
  4. Prepare a muffin tin by greasing it or using muffin liners.
  5. Fill each muffin cup about 2/3 full with the mixture.
  6. Bake for 15-20 minutes or until a toothpick inserted comes out clean.
  7. Cool slightly before serving, optionally drizzled with maple syrup.

Notes

Muffins can be stored at room temperature for 2 days, refrigerated for up to a week, or frozen for a month.
