A vibrant and hearty Middle Eastern dish of poached eggs in a spicy tomato sauce, perfect for any meal.

Ingredients

  • 2 tablespoons olive oil
  • 1 onion, diced
  • 1 bell pepper, diced
  • 3 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1 can diced tomatoes (14 oz)
  • 4 to 6 eggs
  • Salt and pepper to taste
  • Fresh parsley or cilantro for garnish

Instructions

  1. Heat the olive oil in a large skillet over medium heat. Add the diced onion and bell pepper, and sauté until softened, about 5 minutes.
  2. Stir in the minced garlic, cumin, and paprika. Cook for another minute until fragrant.
  3. Add the diced tomatoes (with their juices) to the skillet. Season with salt and pepper, and simmer for 10 minutes.
  4. Create small wells in the sauce and crack the eggs into each well. Cover and cook for 5-7 minutes.
  5. Garnish with fresh parsley or cilantro before serving.

Notes

Serve with crusty bread, warm pita, or a light salad. For extra flavor, add harissa or feta cheese.
