Delicious baked breakfast tacos filled with fluffy eggs, savory sausage, and melted cheese, perfect for gatherings or a quick breakfast.

Ingredients

  • 8 small corn or flour tortillas
  • 6 large eggs
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1 cup cooked and crumbled breakfast sausage or diced vegetables
  • 1/2 cup diced tomatoes
  • 1/4 cup chopped green onions
  • Salt and pepper to taste
  • Sour cream and salsa for serving (optional)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Sauté the sausage or vegetables in a skillet over medium heat until browned. Remove from heat and let cool slightly.
  3. Whisk the eggs in a large bowl and then add the cooked sausage or veggies, cheese, diced tomatoes, green onions, salt, and pepper. Stir to combine.
  4. Fill each tortilla with the egg mixture and place them in a baking dish.
  5. Bake for about 20-25 minutes until the eggs are set and the tops are golden.
  6. Serve warm with sour cream and salsa if desired.

Notes

You can prep the filling the night before for a quick breakfast. Store leftovers in an airtight container for up to 3 days.
