A comforting and quick egg fried rice recipe, perfect for a delightful meal full of flavor.

  • 2 cups cooked rice
  • 2 eggs
  • 1 cup mixed vegetables (peas, carrots, corn)
  • 2 tablespoons soy sauce
  • 2 tablespoons oil
  • 2 green onions, chopped
  • Salt and pepper to taste

Instructions

  1. Heat your pan by heating the oil in a pan over medium heat.
  2. Scramble those eggs until just set, then set aside.
  3. Stir-fry the mixed vegetables for a few minutes until vibrant and tender.
  4. Combine the cooked rice with the soy sauce, mixing well.
  5. Add the scrambled eggs and chopped green onions, stirring gently.
  6. Season with salt and pepper to taste and serve hot.

Notes

Use day-old rice for the best texture. Feel free to add leftover proteins or different vegetables.
