A comforting meal that transforms simple ingredients into a delicious and healthy version of classic egg rolls, minus the wrappers.

Ingredients

  • 1 bag (14 oz) coleslaw mix
  • 1 tablespoon soy sauce
  • 1 tablespoon sesame oil
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, grated
  • 2 green onions, chopped
  • Salt and pepper to taste

Instructions

  1. Heat the sesame oil over medium heat in a large skillet.
  2. Add the ground pork to the skillet, breaking it up and cooking until browned, about 5-7 minutes.
  3. Stir in the minced garlic and grated ginger, sautéing for an additional minute.
  4. Toss in the coleslaw mix and drizzle in the soy sauce, cooking until the cabbage is wilted, about 3-4 minutes.
  5. Season with salt and pepper to taste and garnish with chopped green onions before serving.

Notes

For a leaner option, substitute ground turkey or chicken. Feel free to add bell peppers, carrots, or snap peas for extra veggies.
