A deconstructed egg roll, this vibrant and quick dish captures all the savory flavor of the traditional takeout favorite without the fuss.

Ingredients

  • 1 pound ground pork or chicken
  • 1 tablespoon sesame oil
  • 2 cups coleslaw mix (cabbage and carrots)
  • 3 green onions, sliced
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • 1/4 cup soy sauce
  • 1 tablespoon rice vinegar
  • Salt and pepper to taste
  • Chopped cilantro for garnish

Instructions

  1. Heat sesame oil in a large skillet over medium heat, letting that nutty aroma fill the air.
  2. Add the ground pork or chicken, and cook until it’s nicely browned, breaking it apart into small pieces as it cooks.
  3. Stir in the minced garlic and ginger, and cook for another minute.
  4. Add the coleslaw mix and green onions to the skillet, cooking until the cabbage is tender.
  5. Pour in the soy sauce and rice vinegar, stirring to combine everything. Season with salt and pepper.
  6. Cook for another 2-3 minutes until everything is hot.
  7. Serve hot, garnished with freshly chopped cilantro.

Notes

This dish is versatile; you can swap the protein for turkey, beef, or tofu. Feel free to add red pepper flakes for heat!
