Delicious homemade English muffins with a crispy edge and soft, chewy texture, perfect for breakfast or brunch.

  • 2 cups all-purpose flour
  • 1 cup warm milk
  • 1/4 cup water
  • 1 tablespoon sugar
  • 1 teaspoon salt
  • 2 tablespoons butter
  • 1 packet instant yeast
  • Cornmeal for dusting

Instructions

  1. Activate the yeast: In a large bowl, combine warm milk, warm water, and sugar. Sprinkle the yeast over top and let it sit for about 5 minutes until foamy.
  2. Combine ingredients: Add melted butter, salt, and flour to your yeast mixture. Mix until a dough starts to form.
  3. Knead the dough: Turn the dough onto a floured surface and knead for about 5-10 minutes until it’s smooth.
  4. Let the dough rise: Place the dough in a greased bowl and cover it with a towel. Allow it to rise for about 1 hour, or until doubled in size.
  5. Shape the muffins: Once risen, punch down the dough and shape it into a log. Cut it into equal pieces and form them into round muffins.
  6. Second rise: On a baking sheet dusted with cornmeal, place the shaped muffins and let them rise for another 30 minutes.
  7. Cook the muffins: Preheat a skillet or griddle over medium heat. Cook the muffins for about 5-7 minutes on each side until golden and cooked through.
  8. Cool before serving: Let the muffins cool slightly before serving.

Store in an airtight container for up to 3 days or freeze for up to 3 months.
