A light yet hearty dish featuring flaky cod fillets complemented by a vibrant roasted red pepper sauce.

  • 4 cod fillets
  • 2 roasted red peppers, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • Fresh herbs (such as parsley or basil), chopped
  • Salt and pepper to taste
  • Cooked rice or crusty bread for serving

Instructions

  1. Preheat your oven to 400°F (200°C), making sure it’s nice and hot for the cod.
  2. Heat the olive oil over medium heat. Once hot, add the minced garlic and sauté until fragrant, about 1-2 minutes.
  3. Stir in the chopped roasted red peppers and let them cook for a few minutes, allowing their sweetness to blend with the garlic.
  4. Season the cod fillets with salt and pepper on both sides. Then, place them in the skillet with the roasted red pepper sauce and cook for about 5-7 minutes on each side, or until the cod is flaky and cooked through.
  5. Garnish with fresh herbs and serve over rice or with slices of crusty bread.

Notes

Feel free to swap cod for other firm fish like haddock or salmon. Enhance the sauce with lemon juice or red pepper flakes for extra flavor.
