A cheesy, flavorful chicken bake layered with salsa and queso, perfect for family gatherings.

  • 4 boneless, skinless chicken breasts
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp smoked paprika
  • 1 tsp cumin
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1 cup salsa (your choice of mild or spicy)
  • 1 cup queso dip (store-bought or homemade)
  • 1 cup shredded cheddar cheese
  • 1/4 cup chopped fresh cilantro (for garnish)
  • Optional: sliced jalapeños for added spice

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Mix together the garlic powder, onion powder, smoked paprika, cumin, salt, and black pepper.
  3. Pat the chicken breasts dry with paper towels and rub the spice blend over both sides.
  4. Heat a tablespoon of olive oil in a large oven-safe skillet over medium heat.
  5. Add the seasoned chicken breasts and sear for about 3-4 minutes on each side until golden brown.
  6. Remove the skillet from heat and pour the salsa over the chicken, coating it well.
  7. Spoon the queso dip over the salsa-covered chicken, spreading it evenly.
  8. Sprinkle the shredded cheddar cheese on top of the queso dip.
  9. Transfer the skillet to the preheated oven and bake for 25-30 minutes until the chicken is cooked through.
  10. Once baked, let it rest for about 5 minutes, then garnish with chopped cilantro and optional jalapeños.
  11. Serve with rice, warm tortillas, or a fresh salad.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days. Reheat in the oven for best texture.
