A delightful Mediterranean rice dish flavored with lemon, garlic, and onion, perfect as a side or base for various meals.

Ingredients

  • 1 cup long-grain rice
  • 2 cups vegetable broth or water
  • 1 lemon (juice and zest)
  • 2 tablespoons olive oil
  • 1 small onion (finely chopped)
  • 2 cloves garlic (minced)
  • Salt to taste
  • Pepper to taste
  • Fresh parsley (for garnish)

Instructions

  1. Heat the olive oil in a saucepan over medium heat. Add the chopped onion and sauté until translucent.
  2. Stir in the minced garlic and rice, cooking for an additional 1-2 minutes until the rice is lightly toasted.
  3. Add the vegetable broth (or water), lemon juice, lemon zest, salt, and pepper. Bring to a boil.
  4. Reduce heat to low, cover, and simmer for 15-20 minutes, or until rice is cooked and liquid is absorbed.
  5. Fluff the rice with a fork and garnish with fresh parsley before serving.

Notes

This dish pairs wonderfully with grilled meats or can stand alone as a vegetarian option. Adjust seasoning to taste.
