Delightfully soft and airy muffins bursting with juicy blueberries, perfect for any occasion.

Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup sugar
  • 1/2 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/3 cup vegetable oil
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup buttermilk
  • 1 cup fresh or frozen blueberries

Instructions

  1. Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners.
  2. In a large bowl, mix together the flour, sugar, baking soda, baking powder, and salt.
  3. In another bowl, whisk together the oil, egg, vanilla extract, and buttermilk until smooth.
  4. Slowly pour the wet ingredients into the dry ingredients, stirring gently until just combined.
  5. Fold in the blueberries carefully.
  6. Divide the batter evenly among the muffin cups, filling each about 2/3 full.
  7. Bake for 20-25 minutes or until a toothpick inserted in the center comes out clean.
  8. Allow to cool for a few minutes in the pan, then transfer to a wire rack to cool completely.

Notes

Serve warm with butter or cream cheese. These muffins can be stored for up to 3 days at room temperature or frozen for up to 3 months.
