Delicious and airy blueberry muffins that are perfect for breakfast or a snack, bursting with fresh blueberry flavor.

  • 2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/3 cup unsalted butter, melted
  • 1 large egg
  • 1 cup buttermilk
  • 1 teaspoon vanilla extract
  • 1 cup fresh blueberries

Instructions

  1. Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners.
  2. In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
  3. In another bowl, mix the melted butter, egg, buttermilk, and vanilla extract until well combined.
  4. Pour the wet ingredients into the dry ingredients and mix just until combined.
  5. Gently fold in the blueberries.
  6. Fill each muffin cup about 2/3 full with the batter.
  7. Bake for 20-25 minutes, or until golden and a toothpick comes out clean.
  8. Allow to cool in the pan for a few minutes before transferring to a wire rack.

Notes

For added flavor, you can include lemon zest or incorporate nuts. Store leftovers in an airtight container for 2-3 days.
