  • 4 large eggs
  • 1/4 cup milk
  • 1/2 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1 tablespoon sugar
  • 1/2 teaspoon vanilla extract
  • Butter for cooking
  • Maple syrup for serving (optional)
  • Powdered sugar for serving (optional)

Instructions

  1. Separate the egg whites and yolks into two bowls.
  2. Whisk the egg yolks with milk, vanilla, and sugar until mixed.
  3. Sift in the flour and baking powder, mixing until smooth.
  4. Beat the egg whites until soft peaks form.
  5. Fold the egg whites into the yolk mixture in three additions.
  6. Heat a non-stick skillet over low heat and grease with butter.
  7. Cook pancakes in a ring mold for about 4-5 minutes on each side.
  8. Serve warm, topped with maple syrup or powdered sugar.

Notes

For best results, ensure mixing utensils are clean and dry. Cooking on low heat takes longer but provides ideal fluffiness.
