Delightful meringue cookies that require patience, offering a crunchy exterior and marshmallow-like center.

Ingredients

  • 2 egg whites
  • 1 cup sugar
  • 1 cup chocolate chips
  • 1 teaspoon vanilla extract
  • A pinch of salt

Instructions

  1. Preheat the oven to 200°F (93°C).
  2. In a mixing bowl, beat the egg whites and a pinch of salt until stiff peaks form.
  3. Gradually add sugar to the whipped egg whites while continuing to beat until the mixture is glossy and forms stiff peaks.
  4. Gently fold in the chocolate chips and vanilla extract.
  5. Drop spoonfuls of the meringue onto a parchment-lined baking sheet.
  6. Place the baking sheet in the oven and leave overnight (or at least 6 hours) to dry and crisp.
  7. Once cooled, enjoy your cookies!

Notes

Ensure bowls and whisk are grease-free for proper egg white whipping. Store in an airtight container at room temperature for about a week.
