A comforting casserole that combines the rich flavors of French onion soup with hearty chicken and orzo, topped with gooey melted cheese.

  • 2 cups cooked orzo pasta
  • 1 lb chicken breast, diced
  • 2 large onions, thinly sliced
  • 2 cups chicken broth
  • 1 cup shredded cheese (Gruyère or mozzarella)
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh thyme for garnish (optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large skillet, heat the olive oil over medium heat. Add the thinly sliced onions and let them cook slowly until caramelized, about 15-20 minutes.
  3. Once the onions are beautifully caramelized, add the diced chicken to the skillet. Cook until the chicken is browned and cooked through, about 5-7 minutes.
  4. Stir in the cooked orzo and chicken broth. Season generously with salt and pepper to taste.
  5. Carefully transfer the mixture to a baking dish, spreading it evenly.
  6. Sprinkle the shredded cheese generously on top.
  7. Bake for 20-25 minutes or until the cheese is bubbly and golden.
  8. Serve hot, garnished with fresh thyme if desired.

Notes

Leftovers can be stored in an airtight container in the fridge for up to 3 days. For longer storage, freeze portions for up to 3 months.
