French Onion Chicken Rice Bake

A comforting one-dish meal combining tender shredded chicken, caramelized onions, earthy mushrooms, and creamy, cheesy rice.

Ingredients

  • 2 cups cooked rice
  • 1 lb chicken breasts, cooked and shredded
  • 1 can (10.5 oz) French onion soup
  • 1 cup shredded mozzarella cheese
  • 1 cup sliced mushrooms
  • 1/2 cup diced onions
  • 1/2 tsp garlic powder
  • Salt and pepper to taste
  • 1 tbsp olive oil

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Sauté the onions and mushrooms in olive oil over medium heat until tender, about 5 minutes.
  3. Combine the cooked rice, shredded chicken, French onion soup, garlic powder, salt, and pepper in a bowl.
  4. Fold in the sautéed onions and mushrooms.
  5. Transfer the mixture to a greased baking dish and top with mozzarella cheese.
  6. Bake in the preheated oven for 20-25 minutes, until cheese is bubbly and golden.
  7. Cool for a few minutes before serving.

Notes

For extra flavor, use leftover rotisserie chicken or seasoned rice. Consider adding breadcrumbs for crunch.
