A hearty pot roast infused with the rich flavors of caramelized onions and slow-cooked to perfection.

  • 23 lbs beef chuck roast
  • 4 large onions, thinly sliced
  • 4 cloves garlic, minced
  • 2 cups red wine
  • 2 cups beef broth
  • 2 tablespoons olive oil
  • 2 teaspoons thyme
  • 2 teaspoons rosemary
  • Salt and pepper to taste

Instructions

  1. Sautéing the onions: In a large skillet, heat olive oil over medium heat. Add sliced onions and cook until caramelized, about 20 minutes. Add garlic and cook for an additional minute.
  2. Preparing the roast: Season the beef chuck roast generously with salt and pepper. In a slow cooker, place the caramelized onions on the bottom, followed by the roast.
  3. Adding the liquids: Pour in red wine and beef broth, and add thyme and rosemary.
  4. Slow cooking: Cover and slow cook on low for 6-8 hours or until the meat is tender.
  5. Serving: Serve with mashed potatoes, roasted vegetables, or crusty bread to soak up the sumptuous sauce.

Notes

For extra depth, deglaze the skillet after cooking the onions with a splash of red wine, scraping up any flavorful bits before adding it to the slow cooker.
