  • 3 cups of peeled and diced apples (about 3 large apples)
  • 2 cups of all-purpose flour
  • 1 ½ cups of granulated sugar
  • 1 tsp of baking powder
  • 1 tsp of baking soda
  • 1 tsp of cinnamon
  • ½ tsp of salt
  • ¾ cup of vegetable oil
  • 3 large eggs
  • 1 tsp of vanilla extract
  • 8 oz cream cheese, softened
  • ½ cup unsalted butter, softened
  • 4 cups powdered sugar
  • 1 tsp vanilla extract (for frosting)
  • A pinch of salt (for frosting)

Instructions

  1. Prepare Your Apples: Peel and dice the apples into small chunks.
  2. Mix Dry Ingredients: In a large bowl, sift together flour, sugar, baking powder, baking soda, cinnamon, and salt.
  3. Mix Wet Ingredients: In a separate bowl, whisk together vegetable oil, eggs, and vanilla extract until well combined.
  4. Combine Wet and Dry Ingredients: Gradually add the wet mixture to the dry ingredients, stirring gently.
  5. Fold in the Apples: Gently fold the diced apples into the batter.
  6. Bake the Cake: Pour the batter into a greased 9×13 inch baking pan and bake at 350°F (175°C) for 35-45 minutes.
  7. Cool the Cake: Allow it to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  8. Make Cream Cheese Frosting: Beat cream cheese and butter until creamy, then gradually add powdered sugar and beat until fluffy.
  9. Frost the Cake: Spread frosting over the top of the cooled cake.
